Buko Fruit Salad

10 young whole coconuts, water removed, flesh scraped
4 pineapples in cubes
3 tin coconut milk, water drained
10 lychees in quarters
4 apples, peeled and cubed (hold in lemon juice)
1 paw paw de-seeded and diced
4 mangoes, stoned and diced
1 kg cherries stoned
3 tin condensed milk
500 ml whipped cream
300ml stock syrup
200g crushed peanuts

Method

1. Open coconuts and remove flesh.
2. Prepare fruit as described.
3. Add all liquids together and mix with nuts.
4. Allow to settle and chill in fridge for 1 hour.
